We hosted a 7 - flight wine tasting on October 22nd and had a great time celebrating with visitors of all ages! We received so many wonderful comments on our wine, thanks again to everyone who came out!!
One thing it seemed everyone agreed on - whether they were 7 or 47 - is that our Pinot Noir Grape Muffins made with grapes freshly harvested (late harvest with high sugars, wings only) from Madrona Hill Vineyard were a hit!
We received several requests for the recipe; we think these muffins will pair nicely with tea and coffee for breakfast or as a late-night snack complete with slippers and a cup of milk!
Without further adieu, here it is:
Ingredients
2.5 cups flour
1 cup sugar
2.5 tsp baking powder
1 cup milk / almond milk
1 tsp vanilla
2 eggs
1/2 cup butter
1.5 cups de-seeded grapes cut into pieces (we used Pinot Noir grapes, but this can be substituted with red / black grapes)
Directions
Preheat oven to 375°F, line 12 Muffins tins with paper cups (or grease 9"x12" baking pan for bars)
Combine flour, sugar, and baking powder.
Add milk, eggs, butter and vanilla.
Stir until ingredients are combined. Lightly fold in grapes.
Bake 25 minutes or until golden brown on top, Cool in pan.
